Key Ingredients: Coriander, cumin, red chilli, turmeric, dried mango powder (amchur), garam masala, black pepper, and dried ginger — a warm, tangy blend that brings chickpeas to life.
How to Use: Boil chickpeas until soft. In a pan, sauté onions and tomatoes in oil, add ginger-garlic paste and this masala, and cook until the oil separates. Add the chickpeas, a splash of water, and simmer until the gravy is thick and fragrant.
